As a niche food establishment, CheeseMé Charcuterie & Coffee will focus on two products: cheese and coffee. Complementary products like specialty meats, jams, bakery items, sodas, teas and waters will also be available for sale. Menu items featuring cheese, such as customized grilled cheese sandwiches and pizzas will be available during lunch and dinner hours, and a rotating “Midnight CheeseMé Special” on weekends.
Our mission at CheeseMé is to curate an exquisite selection of thoughtfully sourced and expertly prepared artisanal cheeses, while also providing educational opportunities on cheeses and pairings. Rooted in celebrating timeless culinary traditions, we strive to create a welcoming space where every visit is an exploration of flavors, a gathering of friends, and an invitation to indulge in life's simple pleasures.
CheeseMé Charcuterie & Coffee is a women and Latina-owned business serving a curated selection of specialty cheeses and coffee. The concept for the shop was conceived in 2023 by Jessica Mueller and Emilie Herrera. Inspired by Mueller’s travels to New Orleans and a visit to a local neighborhood shop that created a space for young professionals and families to gather in a similarly hospitality-driven city, the duo decided to bring that same feeling and experience to Midtown San Antonio.
Emilie Herrera, Co-Owner
Emilie Herrera is the co-founder of Folklores Coffee House and a senior business partner in People Operations for a tech company. With over 19 years of experience in HR across the U.S. and Mexico, she’s all about turning challenges into successes. Emilie’s entrepreneurial spirit shines through her work at Folklores, which she launched in 2018, handling both financial and operational aspects. She’s also a dedicated commcity leader and currently serves as the Vice President of Economic Empowerment at Poderosa Rising. Emilie holds a bachelor’s in human resources from UT Arlington and is an expert in HR policies, training, performance management, and business growth.
Jessica Mueller, Co-Owner
Jessica Mueller has over 11 years of experience planning and executing events and programs for nonprofits like San Antonio Leaders & Teachers (SALT), Youth Do Vote, Tech Bloc, and the San Antonio Hispanic Chamber of Commerce. She is well-connected in the San Antonio entrepreneurial ecosystem, helping countless small business owners gain access to essential resources. Jessica also has hands-on experience in food service management as the manager of a local cupcake shop and as an accounting assistant for the local small business, Affordable Glass and Mirror.
